Goose Jerky!

Decided to try some jerky with the geese we shot last weekend.
Started with two pounds of goose breast. Used a store bought cure for my first batch.
Froze it and then sliced thin...Marinated it overnight.


We don't have a dehydrator so I used the oven. Set it at 200 and propped the door open with a wooden spoon


Took a few hours for it to dry out.. worked but made me want a dehydrator.


Turned out great and the flavor is good... Maybe a teriyaki next time!

Nice Barry, My ex-wife used to make the Deer Jerky with our Popeels Dehydrator back in the late 80's. Liquid smoke is in moderation, teriyaki is your friend on this one, try orange zest or others spices.

sweet...I havent tried pineapple juice but make alot of different flavors. My favorite is sweet and spicy which include real maple syrup and jalepenos.
