Well I went out for an evening wood duck hunt last night and came home with my first rabbit!!!!!!! Heard some rustling, turned and looked and was startled to see a peter cottontail. No ducks, but still a great night! :) :)

Congrats on the harvest. Is this the same "D", that posts on "Duckboats.net" and was going to college and wanted to build a little "P" last year?

If so, this is Duck Hunters Father and what happened? Did you and your father build it? Memorie serves, your father is a master carpenter and boatbuilder.

Anyway, congrats on your harvest again. :icon_salu

Rabbit Season? I thought it was duck season!

Looks like "Bugs" lost this one.

How ya gonna cook it? Stew, grill or fry?

Yes it is "D" from the duckboats site....yes we did build the pirogue and it turned out beautifully. Still have to get pictures...i just bought a digital camera so hopefully i will get a pic soon. Used some mahogany that we had lying around the shop for the ribs and end stems as well as a yoke. Ordered some marine grade mahogany plywood and used euro beech for rails and a keel <tracks very well>. Fiberglassed the outside of the hull with 6 oz glass, then used about three coats of resin to water proof the inside. Didn't cost me more that $250 <if you don't count the second round of resin and hardener I had to buy b/c my brother was a genius and spilled all my resin and hardener>. Did a very nice thing......I gave it to my buddy who did not have a boat to hunt out of, while I have access to a variety of canoes and kayaks. I can't wait to build another one and I may have found a way to get college credit for it!!!!!

This morning I quartered the rabbit, and battered and fried the back legs and back meat up to the rib cage for breakfast. Made some biscuits and some gravy from the leftover oil and seasonings. It was delicious....I think I could very easily also become a rabbit hunter. My mom wants me to go out and get some more soon so that we can try out a rabbit pie recipie. With the front end and remaining back meat I boiled it, deboned it and made a small pot of rabbit stew. It is simmering right now. For dinner though I had duck a l'orange made out of this duck. Friend of mine shot it with a pellet gun as it was sitting on his pool poopin' everywhere, thought of me, put it on ice and brought it to me the next day. Took the liver and wrapped it in bacon and jalepeno...........one of the best tasting livers I've had in a long while. How's your season gone? Mine has pretty much sucked...lost a month but oh well. There is always next year.

Forget the liver.....cut the duck (or goose) breast meat into small finger size strips, marinate them in your favorite steak marinade and wrap THEM in the bacon with jal. peppers, cheese, and/or any other appetizer styled item, grill till medium rare.....smoke if you have some hickory or pecan....to add to the grill....They will disappear off the platter like majic.

The rabbit can be cooked any way you cook chicken...simple or complicated recipes.....the French are said to eat more rabbit than chicken. The secret to wild rabbit is to clean it immediately and soak for a few hours in salt water with a little baking soda before cooking.
