I came up with this tonight and it was awesome. With a little inspiration and venison cutlets from Gene and Bubba.
Brown thin cutlets in 1/4" of olive oil for a few minutes till just brown. Take the deer out and add a chopped onion and saute'. Then add some Dales, some white wine and sprinkle some flour on. Heat till it thickens some put the cutlets back in and serve over rice. Flat out awesome.

Sounds good. Guess there's something else I need to shoot. Duckwhacker made some this weekend that was easy and amazing.

It's no backstrap stuffed with crab and wrapped with bacon but **** good for 10 minutes of cooking. I'm sure some of you good cooks can change it up a little into something even better.

Thanks backcast, it don't get much simpler than the way I made it that night. Slice backstraps 1/4" thick, sprinkle both side with Adobo seasoning, place in hot oil and turn when edges start to brown. Yummm. Would have been even better if we didn't have to keep pickin' bugs that fell from the lantern into the pan.:D
