This stuff is really awesome put aside a half day to put it together and simmer it for a day but it's worth it. You need a BIG pot.
Boil ducks in crab boil then chop into pieces
Chop 1 or 2 lbs hot pork sausage you equal duck and sausage
brown/sautee the two in butter season with Tony's
Chop onions 2 large
celery 2 bunches
green pepper 4
you want to end up with a large bowl of each
Sautee each in butter/fresh chopped garlic and Tony's (are you seeing the trend here)
Make a roue out of 1 cup flour 1 cup oil Make it slow do not burn and dark brown about like a chocolate lab. (never stop stirring with spatula should take you 40min atleast)
Boil about 8 cups water and beef boullion and pour into roue
Add trinity and meats heat till slow boil
Add 1 bag frozen chopped Okra fresh if you can get it
Add a couple large chopped tomatoes and a can of stewed if you like
Add worcestershire

red pepper
salt
black pepper
bay leaves
More fresh chopped garlic
Takes me about 2 to 3 hrs to put it all together
and Tobasco to taste which is a work in progress and should take you two days of simmering till it's right. As you simmer it the oil and butter will rise to the top with some other crusty stuff. Spoon that off as you go and restir everyonce in a while
Serve on white rice with a very cold beer.
I like it hot enough where you can't tell for a while and get that lip burn to where you have to keep eating it then get the after taste hot, that is seasoned right with the tobasco.
