I know alot of folks here will grill duck breast wrapped in beacon.

here's mine

duck breast single teal breast or half larger duck breast.
apple thin wedges or dates pitted and butterflied
onion (cut verticle to make canoe shapes) usually quartered and seperated
1 tea spoon minced garlic
gorganzola or bleu cheese
1/4- 1/2 cup dale's sauce (depends if you like dale's)
Montreal steak seasoning 1 table spoon or so
1-2 oz whiskey
1 1/2 cup apple juice
bacon
toothpick or skeward

marinate duck breast in the dale's, whiskey, apple juice, montreal season, garlic. The longer the stronger. A couple hours to a few hours.

While marinating, slice onion in canoe shapes (to stuff w/ the cheese) and seperate each layer. Use on piece(layer) per duck breast, slice apple wedges or prep dates to be stuffed w/ gorganzola or bleu.

With onion canoe press the cheese in the concave side. Then with date (if using date) fill with cheese. now take duck breast from marinate (save marinate) and place the onion on one side and the date or apple on the other and wrap w/ bacon slice. Make sure that the cheese in in between the duck and onion/date. kinda a sandwich. Stick w/ toothpick or skeward.

Sprinkle more Montreal season. Reduce marinate on stove in sauce pan while ducks grill. Med high heat (add a little sugar and simmer down untill thicker) for final glazing sauce.

Cook on grill med/hot coals. Best when bacon is crisp and duck is med rare.

Here it is 9:30 something in the morning. I read this and thought WOW! Now I am hungry for some duck done this way.
