4 small duck breast or 2 large.
ground coriander
ground cumin
chili powder
garlic powder
cayene pepper
Olive oil
Sweet onion
deveined and deseeded fresh jalapeno peppers or canned chiptoles
diced garlic
Cut the breast length ways into 1/4-1/2 wide strips. Place them in a mixing bowl. Combine 1 tsp of the above spices, except use the cayenne to your liking. Add several tablespoons of Olive oil, mix all throughly. Let it sit.
Saute the onions and peppers first and then add the garlic lastly to keep it from burning.
Add several tablespoons of olive oil and a tablespoon of butter to the skillet. Get it hot, not smoking hot though.
Toss in the duck and continously stir it. When the duck is brown on all sides remove.
On a warm tortilla, place the onions,peppers and garlic. Add some of the duck. Put on your favorite cheese and enjoy.
